This week’s farm share was a bit of a puzzle–turnip greens, carrots and parsnips (yay!), bok choy, radishes, red onions, and beets again (boo). Anyone have any good recipes for radishes? I think I’ve figured out uses for the rest (except the beets–they’re going to Hannah’s kitchen where they’ll be properly appreciated), but I’ve not seen much with radishes except in salad, and we have so many other veggie dishes coming up that I don’t think we’ll eat enough salad to use them up…
Well, we’ve been so healthy of late that I have to share my latest less-healthy discovery…I think these might be the yummiest muffins I’ve ever had!

Double Chocolate Banana Muffins
1 cup white flour
1/2 cup whole wheat flour
3/4 cup sugar
1/4 cup unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. baking powder
1 1/3 c. mashed bananas
1/3 c. oil
1 egg, slightly beaten
1 c. chocolate chips
In mixing bowl, combine flour, sugar, cocoa, baking soda, salt and baking powder. Mix bananas, oil, and egg and add to dry mixture. Stir until just combined. Fold in chocolate chips. Fill greased muffin cups 3/4 full. Bake at 350 for 20-25 minutes. Makes 12 regular size or 36 mini muffins.
Yum! It was hard for me to save any for Derek yesterday, but since banana-chocolate chip muffins are his favorite, I managed to save a few…and pawned off chocolate beet cake on Tommy (who thought we were both eating the same chocolate dessert) while I was eating my 4th muffin…for the baby, of course… I have a feeling I’ll be buying extra bananas on purpose for awhile so that I have the excuse of making these again with the overripe ones! =)

I LOVE BEETS. I love them raw, I love them cooked, I don’t love how they turn my kitchen magenta, though.
