Farm Share, Week 22

Bell peppers (peppers are great and all, but sheesh! we’ve gotten a lot of them!)
Beets (gulp)
Kale
Plums
Blueberries
Cherry tomatoes
Freshly dug potatoes
Red cabbage

I’m going to make another beet cake, because Dad M convinced Tommy that beets are yummy, so I’m going to boil them up for him, anyway.  I’ll cut down on how much I used this spring and add more chocolate chips, and we’ll see how it works.  The trouble with all this kale (and swiss chard from last week) is that we just don’t like the flavor on its own, and now that I can’t use dairy to mellow it out in a dish, it’s just a lot.  We did kale and chard eggrolls the other night, and we ended up throwing out the last eggroll because all three of us had had as much greens as we could take for one night.  (Interestingly, Tommy liked the chard but could totally tell when I gave him a kale eggroll–he immediately picked out the filling and told us, “I don’t like kale.”  Smart kid.)  So I’m going to try a recipe for Ribollita that uses kale, potatoes, cabbage, carrots and celery (leftover from earlier weeks), and stale bread in a chicken broth base.  If it’s decent, I’ll post it.  If not, I’ll still be on the lookout for non-dairy greens recipes that don’t just taste like greens!  We’re eating them….but not completely cheerfully!

    What about using the kale for minestrone soup? Sometimes I toss spinach leaves in, but kale would work well too. There are so many other yummy flavors in there, the interesting kale taste may not be so noticeable! My aunt sautes kale with olive oil, garlic and lemon. She serves it as a side dish, and I actually like it that way! Your blueberries look yummy!

    my Aunt Debbie makes Kale (a veggie I normally don’t like on it’s own) and it is delicious- she steams it with a LOT of fresh squeezed lemon juice and garlic- it is quite good- I’ll ask her for the specifics and send them your way.

    I didn’t event notice Leslie’s comment above mine! jeesh- you know the kale is good for two people to make comment about it!

    I thought of something else- Josh loves Zuppa Toscana at Olive Garden (I have not attempted to make it at home) and I think the green leafy veggie floating in the soup is kale.
