Homemade Pasta Making

Now that we can all eat eggs, Derek thought it would be a good idea to try to make his Grandma Tata’s homemade pasta again.  We pulled out the pasta maker from the basement and gave it a whirl (I say we, but Derek and Tommy did all the work), and it turned out great!  Served with homemade sauce (also Grandma’s recipe), it was a big hit.  Tommy had fifths, Elizabeth had seconds, and I won’t admit to how much we ate.  Yum!

    Does Derek share this recipe, or is it a family secret? My wedding-present pasta maker is languishing unused in the top cupboard because pasta seems so fiddly. But if it’s that good…

    Not too secret, Elsa. It’s actually almost identical to the typical pasta recipe out there, like this one from Mario Batali. My family’s recipe includes using an eggshell full of water and about a tablespoon of olive oil in the egg mixture. Oh, and the dough rests under a bowl instead of in plastic wrap–that’s what you get for 100-year-old traditions, I suppose!

    And it takes some experimenting on each batch to get the texture right, and patience to let the flattened strips dry out a bit before you run them through the spaghetti attachment.
