Ode to the Parsnip

I had never had parsnips before…in fact, I didn’t really know what they were.  But when we got 8 of them in our farm share box this week, I discovered that they show up in a variety of fun-looking recipes.  Actually, I’m going to have to save most of the recipes for future weeks, because we used all of our parsnips in this one.  Tommy had thirds of “pips”–definitely a big hit!

Peel a few potatoes and parsnips and a carrot or two.  Cut into 1-inch chunks, cover with water, and bring to a boil.  Reduce heat and simmer, covered, for 20-30 minutes or until vegetables are tender.  Drain water and mash with a dash of milk, butter, salt, and 1 Tbsp. brown sugar.  Serve like mashed potatoes!

I don’t know exactly what I was expecting, but it was a really interesting side dish…it reminded us a little of sweet potatoes (maybe that’s why Tommy had thirds!), it smelled a bit more like carrots than we were expecting, and it tasted sweeter than normal mashed potatoes.  (I don’t think the 1 Tbsp of brown sugar sweetened it up that much).  We’re definitely looking forward to getting more parsnips next week, though!  After trying some of the other recipes, we’ll definitely enjoy this one again.  A new vegetable that all three of us like–hurray!

    that does sound good! i just have to try to remember what a parsnip looks like the next time i am at the grocery store…

    Interesting…I’ve been curious about parsnips for a while now. I have a bunch of baby food recipes that call for them; must be because they are sweet.
