A fairly busy weekend around here, with Piko visiting and my first chance to host Easter dinner myself!
Of course we had to go to the Cheesecake Factory, where Derek ate this entire gross burger and Piko and I split a chocolate tuxedo cheesecake that was probably a 7 out of 10–we’ll try a different kind next time…

And I’d tried to trim over Tommy’s ears last week but ended up making him look like Mr. Spock, so Derek got out his grandpa’s barber clippers and Piko helped give Tommy a real haircut…

I made the traditional lamb cake and didn’t need any toothpicks to keep it together!!!

We tried valiantly to get a family picture, but Tommy would NOT cooperate and look at the camera…

He did find time to act pretty cute with his best little buddy in the nursery, Reagan…what a ladies’ man…


And I got out my good china while we feasted on ham, hashbrown casserole, roasted carrots and parsnips (Tommy prefers them mashed), and a great salad that Andrea brought. Yum…

Keith just informed me that he approves (theologically) of your lamb cake. This is high praise indeed because he typically eschews holiday traditions.
So, I guess this means in I need your recipe! 🙂
Well, I just used a standard white cake recipe from one of my standard cookbooks (Betty Crocker?) and added coconut extract instead of vanilla. The frosting is buttercream with coconut and vanilla extracts, and I dyed the coconut “grass” with green food coloring. The mold is the special part–it’s an antique that my grandma had for decades and then my mom acquired in my childhood and finally gave to me last year, so I’m the third generation to use it for Easter dessert! I’m sure you can google to find lamb cake mold pans, and the trick is using the Pam spray with the flour in it to keep chunks of cake from sticking to the more detailed parts of the mold (growing up, we always greased and floured the pan, but the ears always fell off and had to be put back together with frosting and toothpicks).
