Farm Share, Week Three

This week’s farm share was a bit anticlimactic, I must admit.  Over the last two weeks, we’ve had quite the assortment of random new meals, and this week, the lettuce, cabbage, kale, turnips, potatoes, and onions aren’t sparking any great inspiration.  I just threw away part of my first onion from the first food box (I gave away the rest the past two weeks because onions and my 3rd trimester tummy don’t mix well), but I’m determined not to waste any more this week.  Up on the menu: Runzas, Potato Soup with kale and ham (because we still have leftover ham from Easter, and I stupidly bought 6 lbs of potatoes last weekend that have barely been touched), French onion soup (Derek’s request–I’ll be eating leftovers that night), Golden Potato and Turnip Casserole (gotta love More With Less when you’re looking to use up potatoes…), Ham and Kale Quiche (see a trend?), and Pasties (to celebrate our Michigan heritage and hopefully use up the end of the onions, turnips, and potatoes before next week’s box).  It’s quite the hearty meal/soup week, but the hope is that several of these things will freeze well for easy meals after the baby comes!

On a related note, I don’t see us saving much money yet with this farm share.  I’m still having to buy milk, eggs, cheese, meat, and fruit, and we haven’t had any bean-based dishes since the veggies started coming.  I feel like we’re eating more meals that are vegetable-heavier than normal, but it seems like I’m still spending as much as I did before on my weekly grocery trips.  Probably this is because my normal meal repertoire consists of a lot of the same inexpensive ingredients (beans, chicken broth, pasta, diced tomatoes, chicken, etc) that I buy on sale or in bulk and always have on hand.   This week, though, we’re having two meals that call for ground beef (used quite sparingly in my kitchen), and last week, I got several random extra items like sour cream and ricotta cheese that we don’t usually have sitting around in our fridge.  We love the variety, but it’s not cheaper yet.  I do think that as summer approaches and we start getting more items that we’re used to eating in-season (tomatoes, zucchini, and any fruit, for starters), I’ll find myself making more familiar meals again and shopping less frequently to round out our farm share delivery.  Stay tuned as the 2009 Grocery Experiment continues!

Babywatch Commences

Well, now that I’m three weeks out from my duedate, I am considered “full term” by my OB practice and could have this baby any time!  (Prayers for an early and healthy delivery so we can make it to Mariel’s and Peter’s weddings would be much appreciated…)

 Today they started checking all the fun signs…I’m 1 cm dilated and the baby’s head is down, for those of you who are interested.  Of course, I could walk around just 1 cm dilated for another month, but fellow moms know that it is quite encouraging to hear “only 9 cm to go!”

 And Tommy fell asleep on the couch for the babysitter this morning (that’s what happens when you’re standing up in your crib shouting about riding in the car with grandpa at 5:45 am), so I’m off to be productive while he’s down and pack my hospital bag just in case things happen sooner rather than later!

Easter in Chicago

A fairly busy weekend around here, with Piko visiting and my first chance to host Easter dinner myself!

Of course we had to go to the Cheesecake Factory, where Derek ate this entire gross burger and Piko and I split a chocolate tuxedo cheesecake that was probably a 7 out of 10–we’ll try a different kind next time…

And I’d tried to trim over Tommy’s ears last week but ended up making him look like Mr. Spock, so Derek got out his grandpa’s barber clippers and Piko helped give Tommy a real haircut…

And I got out my good china while we feasted on ham, hashbrown casserole, roasted carrots and parsnips (Tommy prefers them mashed), and a great salad that Andrea brought.  Yum…

Breakfast Like A Big Boy

This morning Tommy decided that he wanted to eat his “bun” at the table like a big boy!

This week’s farm share was a bit of a puzzle–turnip greens, carrots and parsnips (yay!), bok choy, radishes, red onions, and beets again (boo).  Anyone have any good recipes for radishes?  I think I’ve figured out uses for the rest (except the beets–they’re going to Hannah’s kitchen where they’ll be properly appreciated), but I’ve not seen much with radishes except in salad, and we have so many other veggie dishes coming up that I don’t think we’ll eat enough salad to use them up… 

Well, we’ve been so healthy of late that I have to share my latest less-healthy discovery…I think these might be the yummiest muffins I’ve ever had!

Double Chocolate Banana Muffins

1 cup white flour

1/2 cup whole wheat flour

3/4 cup sugar

1/4 cup unsweetened cocoa powder

1 tsp. baking soda

1/2 tsp. salt

1/4 tsp. baking powder

1 1/3 c. mashed bananas

1/3 c. oil

1 egg, slightly beaten

1 c. chocolate chips

In mixing bowl, combine flour, sugar, cocoa, baking soda, salt and baking powder.  Mix bananas, oil, and egg and add to dry mixture.  Stir until just combined.  Fold in chocolate chips.  Fill greased muffin cups 3/4 full.  Bake at 350 for 20-25 minutes.  Makes 12 regular size or 36 mini muffins.

Yum!  It was hard for me to save any for Derek yesterday, but since banana-chocolate chip muffins are his favorite, I managed to save a few…and pawned off chocolate beet cake on Tommy (who thought we were both eating the same chocolate dessert) while I was eating my 4th muffin…for the baby, of course…  I have a feeling I’ll be buying extra bananas on purpose for awhile so that I have the excuse of making these again with the overripe ones! =)

Bedtime Story

One of the many wonderful things about having Derek back home is that he does a great job reading bedtime stories like Bedtime for FrancesI just can’t get over how well Tommy goes to bed after some quality Daddy-Tommy time!

Ode to the Parsnip

I had never had parsnips before…in fact, I didn’t really know what they were.  But when we got 8 of them in our farm share box this week, I discovered that they show up in a variety of fun-looking recipes.  Actually, I’m going to have to save most of the recipes for future weeks, because we used all of our parsnips in this one.  Tommy had thirds of “pips”–definitely a big hit!

Peel a few potatoes and parsnips and a carrot or two.  Cut into 1-inch chunks, cover with water, and bring to a boil.  Reduce heat and simmer, covered, for 20-30 minutes or until vegetables are tender.  Drain water and mash with a dash of milk, butter, salt, and 1 Tbsp. brown sugar.  Serve like mashed potatoes!

I don’t know exactly what I was expecting, but it was a really interesting side dish…it reminded us a little of sweet potatoes (maybe that’s why Tommy had thirds!), it smelled a bit more like carrots than we were expecting, and it tasted sweeter than normal mashed potatoes.  (I don’t think the 1 Tbsp of brown sugar sweetened it up that much).  We’re definitely looking forward to getting more parsnips next week, though!  After trying some of the other recipes, we’ll definitely enjoy this one again.  A new vegetable that all three of us like–hurray!

Saturday I was so blessed to have a visit from my South Bend prayer group girls!  Katie, Heather, and Andrea drove in for the day…we made eggrolls and sampled beet cake, walked around and window shopped at an outdoor mall all afternoon (and I actually found an Easter dress!), enjoyed Lou Malnati’s Chicago-style pizza for dinner, and generally had a great time of fellowship and girl time!  Yay for good times with good friends!

Pregnancy Dumbness

My friend Kathy refers to “pregnancy dumbness” as that state of mental abstraction throughout pregnancy (and especially near the end) that leads us to do, well, dumb things.  I think today I took the grand prize.

Before Tommy’s nap, Derek took him into the bathroom to try to use the potty.  After an unsuccessful attempt, he sent him to me in the bedroom to get ready for his nap.  Tommy had his pants in his hand, and I helped him put them back on before Derek got in to hoist him into the crib.  Two and a half hours later, Derek went in to get Tommy up from his nap, and the poor dude was soaking wet–so wet, in fact, that his hands were pruney!  “Did you put his diaper on weird?” asked the distraught father.  “I didn’t put his diaper on–you did!” I replied, walking into the room to see what the fuss was all about.  “Em, I sent him in to you straight from the potty…obviously he didn’t have a diaper on!” was the sensible reply.  At that moment, we removed the drenched pants and discovered the problem–Tommy didn’t have a diaper on at all.

At this point I sat down on the rocking chair and started laughing hysterically.  Derek, annoyed but trying to give me the benefit of the doubt, asked how I could have put his pants back on him without noticing that he didn’t have a diaper on:  “I can see that the dress shirt kindof dips down in front and back so that you might not notice right away, but what were you thinking when you pulled up the pants and snapped them up?”  I have no idea.  You’d think after 2+ years of this business, I’d notice whether my son was diapered or not.

In recounting this incident to my mom later in the afternoon, I dissolved into hysterics again.  She assured me that she’d done many stupid things over three pregnancies herself, but she never managed to forget to put a diaper on any of us.  Obviously I’ve reached new heights of pregnancy dumbness today!
