Skinny Chicken Tortilla Soup

I love sharing recipes, so here is one of our favorites.  I actually got it from one of those chain emails where you’re supposed to send to the top of the list and add your name to the bottom.  I’ve done it several times and have only ever gotten two or three recipes, but this one is worth all the fuss.   

Skinny Tortilla Soup 
In a large saucepan combine:
1 can fat free refried beans
1 can fat free black beans (rinsed and drained)

1 can reduced fat chicken broth

1 ½ cups frozen corn (or one can corn)

¾ cup chunky salsa

¾ cup cubed chicken breast (already cooked)

½ cup water
 


Bring mixture to a boil.  Reduce heat, cover, and simmer for 10 minutes.  Add 1 cup reduced fat shredded cheese (optional for those of us who have to do the dairy-free thing).  Cook and stir over low heat until melted.  Top with tortilla chips and serve.
