I’m looking at a curried eggplant recipe for tonight. But I love eggplant parmesan, so maybe I won’t bother. Thoughts?
Curried eggplant sounds intriguing — you should give it a shot and share the results! Also, Martha Stewart has a yummy recipe for eggplant focaccia I tried a few weeks back. It’s so good we made it again tonight for our pastor, who claimed he has never liked eggplant and he gave it a thumbs up (I had made half the recipe without eggplant just in case, but the only one everyone ate was the eggplant version). The recipe is from last month’s Every Day Foods mag, but I bet it’s on her website if you’re interested!
