In my quest for pumpkin dishes, I found this one on momadvice.com, one of my favorite frugal mom blogs (and home of Freebie Friday!)…

I pretty much followed the recipe, but we found it a bit bland–sometimes we like bland, but we’ll probably add some peppers to the garlic next time for a bit more kick. Again, the pumpkin flavor is understated–I’ll add the full 2 cups next time. Tommy thought it was mac and cheese and had two huge helpings (well, we did, too…). Looking forward to making it again!
That looks like a very interesting dish…is it similar to the Deceptively Delicious dishes? I bet Aidan would like it! Is the pumpkin taste very strong?
You can definitely tell it’s pumpkin, but you could adjust the flavor by adding more or less…
Where are you getting pumpkin? I haven’t been able to find a store brand at Kroger and I refuse to pay $2.50 a can for the brand name. Does Aldi carry it this time of year?
We are also on a pumpkin shortage!!!
Our local Aldi (South Bend area) carries 14.5 oz cans of pumpkin puree this time of year. It’s pretty much a seasonal thing, so I stock up!
Yep, I’ve been getting mine at Aldi…and I think they’re .79 a can here in Chicago. They came out with them a few weeks ago and generally carry them through Thanksgiving, though I know there’s a pumpkin shortage this year in the main stores, and that might affect the availability at Aldi, too.
I will look again at Aldi this weekend! Thanks for the tips. 🙂
