Look who’s been asking for seconds on spinach salad:
And here’s the secret, which I should have tried when he stopped eating leafy greens two years ago (understandably–the farm share was rather heavy on kale/collards/spinach/chard/mesculun):
Yep. Derek and I are oil and vinegar people, so I realized we didn’t even have any salad dressing in the house for our Super Bowl Party. I picked up some bottles that looked popular, but apparently none of our friends use salad dressing, either. This bottle will get used up, though, now that Tommy’s begging for “more leaves and salad dressing!”

That’s wonderful! I wish I could get Aidan to eat more salads…he is great with all other veggies, but we haven’t found a trick that works for salad eating. I might have to try some different salad dressings!
Salad is a funny thing, isn’t it? Tommy’s pretty good about eating his other veggies, too (broccoli is little trees, peas are little green cannon balls, green beans can be taken apart to find the seeds and used to be mommy’s favorite food, so are therefore cool…), and salad is by far the most expensive way to eat veggies, so I just didn’t push the matter! Salad dressing is not good for you, but I’m convincing myself that the health benefit offset of two large helpings of fresh baby spinach makes it okay.=) I’ve heard other friends call it bunny food and play it up after reading Peter Rabbit…who knows! Now that Tommy’s eating it, we’ll see how well the copycat effect works on Elizabeth!
