Eggplant Curry

So I tried it last night, after much internal struggle.  Because why use your eggplant for anything else if you can make eggplant parmesan?  I’m glad I did, though: 1 onion, chopped 1 eggplant, cut into 1/2″ cubes 2 pints cherry tomatoes, halved 1 Tbsp. curry powder (adjust to your family’s taste) 2 cups water […]

Pork "Fajitas"

I have no idea what spices are supposed to go in fajitas, but this is what I’m calling my crockpot invention: Put in crockpot in this order: 1 pork loin or shoulder roast 1 onion, sliced 1-2 red bell peppers, sliced 1 cup salsa (I used the homemade stuff based on Bethany’s recipe) 1/4 cup […]

Beet Cake Success!

I made a good beet cake this weekend!  I’d tried once before, but it was a bit earthy.  We gave away our farmshare beets after that, but when we got more in this week’s farm share, I thought I’d give beet cake another try.  We spent the day yesterday with some ND friends out in […]

Kashi and Blueberries

My new favorite breakfast, re-introduced to me at Uncle Walt and Aunt Gail’s cottage…kashi with fresh blueberries (strawberries, walnuts, and cashews are good, too)!  It just tastes better when you’ve been out picking the berries off the bushes five minutes before breakfast.

Italian Chicken with Couscous

note–it came to my attention that I’d left off a key ingredient–sugar!–in my double chocolate banana muffins recipe.  Sorry if you tried them and were grossed out!  I’ve fixed that, and to redeem myself, here’s my favorite dinner recipe, double-checked for accuracy:   1-2 boneless, skinless chicken breasts, chopped into bite-size pieces 2-3 cloves garlic, […]

Farm Share, Week 15

Today’s farm share was all green!  I’m excited because I love summer veggies, and these will all be easy to incorporate into my menu planning.  Tonight we’re going to have a salad with the lettuce and one of the cucumbers to go along with a meat pie I pulled out of the freezer.  Tomorrow we’ll […]

Farm Share, Week 11

One interesting thing about having a farm share is that we’ve become very aware of how late the growing season is this year (due to the unusually cool weather).  That means that our farmer’s crops are still scanty, and this week’s box was the smallest yet.  But that’s okay–I haven’t exactly had time for trying […]

We’re all about pancakes at the Muller house these days…Tommy and I make pancakes or waffles at least 4 times a week now because he wants to help me with breakfast, and we’ve tested several great recipes of late.  This is the most popular one right now: Blueberry-Cornmeal Pancakes (from Martha Stewart Living) 1 cup flour […]

Farm Share, Week 4

This week was pretty much all normal stuff that I actually buy at the grocery store–carrots, lettuce, potatoes, and broccoli–plus a couple fun new things–collard greens and scallions.  Last week we didn’t get a box because the cold weather has pushed back the season, so I caught up on using up all of our old […]
